One-Pot Orzo with Bacon, Leeks, Peas, Spinach and Lemon
An easy one-pot orzo dish with crispy bacon, sautéed leeks and peas, spinach, Parmesan and bright lemon.

Ingredients
- bacon, chopped
- leeks, sliced
- peas
- orzo
- chicken broth
- spinach
- Parmesan cheese, grated
- lemon (zest and wedges)
- black pepper
Instructions
- Place the chopped bacon in a large, heavy-bottomed saucepan or Dutch oven. Cook over medium-high heat until crispy, about 6 to 8 minutes.
- Add the leeks and sauté until soft, about 3 to 4 minutes. Add the peas and sauté for 1 minute more.
- Add the orzo and chicken broth, stir to combine, then bring to a boil. Reduce heat to medium-low and simmer about 10 minutes, stirring every few minutes and scraping the bottom of the pot so the orzo doesn't stick.
- Remove from the heat, add the spinach and stir. Cover for a couple minutes or until the spinach has wilted.
- Top with grated Parmesan, lemon zest and black pepper. Serve with lemon wedges on the side.
