One-Pot Orzo with Bacon, Leeks, Peas, Spinach and Lemon

An easy one-pot orzo dish with crispy bacon, sautéed leeks and peas, spinach, Parmesan and bright lemon.

Ingredients

  • bacon, chopped
  • leeks, sliced
  • peas
  • orzo
  • chicken broth
  • spinach
  • Parmesan cheese, grated
  • lemon (zest and wedges)
  • black pepper

Instructions

  1. Place the chopped bacon in a large, heavy-bottomed saucepan or Dutch oven. Cook over medium-high heat until crispy, about 6 to 8 minutes.
  2. Add the leeks and sauté until soft, about 3 to 4 minutes. Add the peas and sauté for 1 minute more.
  3. Add the orzo and chicken broth, stir to combine, then bring to a boil. Reduce heat to medium-low and simmer about 10 minutes, stirring every few minutes and scraping the bottom of the pot so the orzo doesn't stick.
  4. Remove from the heat, add the spinach and stir. Cover for a couple minutes or until the spinach has wilted.
  5. Top with grated Parmesan, lemon zest and black pepper. Serve with lemon wedges on the side.
