Ingredients
- cooked chicken breakfast sausage
- 1 large egg
- 1 egg white
- cottage cheese
- scallions (green onions), sliced
- salt
- black pepper
- part-skim shredded cheddar cheese
- 1 tortilla flour tortilla
- cooking spray or oil
- salsa (for serving) (optional)
- guacamole (for serving) (optional)
- sour cream or Greek yogurt (optional, for serving) (optional)
- hot sauce (optional) (optional)
Instructions
- Add the sausage to a small non-stick skillet and cook over medium heat until the sausage is browned and crispy on the edges. When cooked, remove the sausage from the skillet and set aside.
- While the sausage is cooking, crack the egg(s) into a bowl and season with salt and black pepper to taste. Add the cottage cheese and sliced scallions, then whisk to combine.
- Spray the skillet with cooking spray (or add a little oil) and add the egg mixture. Cook over medium heat, folding the eggs as they set, until the moisture is gone, about 2 to 3 minutes. Remove from the heat.
- Heat a clean large skillet or griddle over medium-low heat and spray with oil. Add the tortilla to the skillet.
- Place half of the shredded cheddar on the bottom half of the tortilla, spreading it to cover half of the tortilla. Top with the cooked eggs, cooked sausage, and the remaining cheese.
- Cook until the bottom is browned and crispy, about 2 to 3 minutes. Fold the tortilla closed, flip with a spatula, and cook until the cheese inside is melted.
- Slice the quesadilla into pieces (the recipe suggests three pieces) and serve with salsa, guacamole, sour cream/Greek yogurt, or hot sauce if desired.
