Pickle Ranch Cheeseburger Sliders

Cheesy sliders made with seasoned ground beef, Hawaiian rolls, dill pickles, homemade pickle ranch, shredded cheese, and bacon. Baked until the rolls are browned and the cheese is melted.

Ingredients

  • 1 package (12-count) King's Hawaiian Original Sweet Rolls
  • 1 lb ground beef
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 6 slices American cheese slices
  • 0.3333333333 cup Grillo's pickles or any dill pickles (chopped for ranch and sliced for topping)
  • 0.5 cup mayonnaise
  • 1.5 tbsp ranch seasoning
  • 0.5 cup milk
  • 1 cup shredded Colby Jack cheese
  • 6 strips cooked bacon, crumbled
  • crispy pickle flavored fried cucumbers (salad topping) (optional)
  • 2 tbsp melted butter
  • sesame seeds (optional)
  • pickle juice (optional splash for ranch) (optional)

Instructions

  1. Make the pickle ranch: combine mayonnaise, ranch seasoning, milk, and 1/3 cup chopped dill pickles; add a splash of pickle juice if desired and stir. Refrigerate to thicken.
  2. Preheat oven to 350°F (175°C).
  3. Cook the ground beef in a skillet over medium-high heat. Season with salt, pepper, garlic powder, onion powder, and paprika. Brown the beef and drain excess grease.
  4. Slice the King's Hawaiian rolls in half horizontally. Place the bottom halves in a greased baking dish or on a sheet pan.
  5. Lay out the American cheese slices over the bottom halves of the rolls.
  6. Spread the browned ground beef over the American cheese.
  7. Drizzle some of the pickle ranch over the beef, then sprinkle shredded Colby Jack cheese on top.
  8. Add crumbled bacon, sliced dill pickles, and crispy pickle flavored fried cucumbers if using.
  9. Place the tops of the rolls onto the sliders and brush with melted butter. Sprinkle sesame seeds on top if desired.
  10. Bake at 350°F for about 10–15 minutes, until the tops are slightly browned and the cheese is melted.
  11. Remove from oven and serve warm with the remaining pickle ranch for dipping.
